I am so excited to be taking Wilton cake decorating classes. I’ve been admiring the work of so many other food bloggers, that I just had to join in the fun. We were assigned the rainbow cake. I took liberty with the writing at the bottom because I was just so proud of myself :). I was also really excited to try the Fluffy Yellow Layer Cake recipe from Cook’s Illustrated that I saw on Katie’s blog. I’m really not too please with the way my icing (the blue) came out. I think my buttercream was too thick, so it wasn’t as smooth as I would have liked. Better luck next time.

AHHHHHHHHHH!!! IT LOOKS GREAT! I’m so excited to see it! lol @ your writing! Haha. The blue icing looks great. You have great color and good uniformity. Next time…before you put on the decoration and after the frosting has dried and formed a “crust” you can take piece of parchment and run it over the cake to make it more smooth. That may help. I do it with my hand by patting it down. But that’s not the “correct” way. lol. Looks fabulous!! can’t wait to see the next one!

Katie- I thought that’s what I should do, but wasn’t sure. I was going to do it quickly in class, but I wound up being late bc I had a brain fart and forgot about daylight savings! Next time for sure!
